'BHUJIA and RASGULLA' 
A delectable invention of Bikaner

        
I feel 'Bhujia' and 'Bikaner' are synonymous.  Hot, pungent 'Bhujia' and too sweet 'Rasgullas' remind you only of Bikaner in any part of the world. My so called modern, health-conscious mind instantly rejects to accept both, as one is deeply fried and other is highly calorific. But then the lid of Pandora box kept in my thinking chamber opened and few jewels popped out. Hey! both are the inventions of 'Maroo Bhumi'-desert land's necessities. In this arid region with high temperature, you are bound to perspire profusely. As consequence salt, minerals, sugar and water are lost in the form of sweat. Now-a-days the loss can be compensated by having western products in the form of soft drinks/ice creams. Actually 'Bhujia' and 'Rasgullas' are very hi-tech foods invented by ancestor Rajasthani mind so both are still prevailing in advanced as well as remote areas. You are travelling, working, feeling thirsty, very little water is available, sweating too. What is the solution? Have  fistful of 'Bhujia' followed by  syrupy one or two 'Rasgullas'. You may drink water or may skip. Well thought  combination of salt, minerals, sugar and water along with protein and carbohydrates. Not only thirst is quenched, nutrients are also supplied with least effort.

Mrs. Renukiran Bajaj is my name on electoral ID. I, as Renu, a daughter of a bank official and as Mrs. Bajaj, a wife of a central government officer have been to various cities of India due to transfers. 'Life Science Teacher' by profession, I have taken up many excursion. Each place of our country is unique but sand particles (Renu) of Bikaner have activated my 'Kiran' part of the name and ray has emerged as logical, analytical reasoning to explore hidden uniqueness of Bikaner. I would like to mention, both are prepared such that can be preserved , carried and can be consumed as and when needed.
Definitely you must be knowing that 'Bhujia' is made from the flour of 'Moth' and 'Chana'-xeric pulses and 'Rasgullas' are prepared from milk supplied by very rich wealth of Rajasthan-cattles. Cacti and camels exhibit phenomenal Darwin's-Lamark's adaptations but we are surviving due to rational thinking and application of our  predecessors. They used natural-local resources to provide palatable, balanced nutrients that too without polluting our environment. I strongly believe both these Bikana's replenishes are one grade up than so called modern thirst quenchers. Here I do not want to condemn the food of latest technique. I want to convey, both the techniques are the outcomes of human brain. Both are scientific. Consumption should be judicious. Let our mind decide according to one's need, environment, pocket and above all health. Certainly, we can balance our intake of conventional and modern food, if we consider these as two pans of a balance. Old is gold. Accept few new to become old. It is a chain. Do not loosen the chain.
